Okeya GINSAN series by Akihito Fujiwara feature unique hammered-texture blades with a core of Ginsan or Silver paper (Gingami) No.3 stainless steel for professional with a hardness of 60-61 HRC, which provides excellent rust resistance and a long-lasting edge as well as its beautifulness.
The handles on these knives are Half Rounded Octagonal Oak wood dyed Japanese Lacquered (Urushi) that recalls the images of Japanese tradition.(Please be noted that the ferrule is a natural product that may possibly be different from the image in color.)

Founded in 1927 at Miki City in Hyogo Prefecture, by Kazuo Fujiwara, the company has been a family-run maker of traditional blades such as small knives and kitchen knives, which are part of the Banshu Miki Uchihamono traditional crafts.
Now led by fourth-generation blacksmith Akihito Fujiwara, the company was rebranded as Okeya Co., Ltd. in 2024 to strengthen its focus on kitchen knife production and continue its legacy of craftsmanship.
